Connacht's single malt marks something rare: the first whiskey distilled in County Mayo in over 150 years, made at a small distillery on Ireland's wild Atlantic coast in Ballina. Double-distilled from 100% Irish malted barley, it rests in ex-bourbon casks before finishing in oloroso sherry, landing at 47% ABV. Expect honey, dried fruit, and almond on the nose, with ginger spice and orchard fruit carrying through to a malty, raisin-tinged finish. Pour it neat to let those layers unfold slowly.
Tasting notes
Aromas of raisins, dried fruit, honey, fudge, butterscotch, almond and star anise fill the nose, complemented by notes of vanilla, malt, dried fruit, baking spices, walnuts and honey throughout the palate.
