Chapter 7 - Chronicle Islay Single Malt Scotch 8 Year
Chronicles are small batches from 3-6 casks that Chapter 7 Whisky repeat in their anthology over time. The whiskies come from their stocks of carefully selected, re-racked and finished casks. The whisky spent five years in refill bourbon hogsheads before spending a further three years in first fill bourbon barrels. This process carefully layers the ex-bourbon flavour profile onto this whisky, creating a stunning dram.
Chapter 7's taste has always been for whiskies aged in bourbon casks. With this whisky, they wanted to have a noticeable, but balanced bourbon wood-aged Islay malt. As they will be continuing the series, the next Chronicle may open new horizons with unexpected wood finishes.
This release won a Gold Medal at The Independent Bottlers Challenge 2020. And we can see why. It's superb.
Nose: Custard, vanilla, smoke, peat and candied fruits.
Palate: Smooth and sweet. Candied oranges, smoked oranges and fudge.
Finish: Young oak, burnt caramel and orange marmalade.
