Domaine Chandon's By the Bay Blanc de Blancs comes from a single cool-climate vineyard in Los Carneros, right where the fog rolls in off San Pablo Bay — and it spends a startling 52 months resting on its lees before release. Made mostly from Chardonnay with a splash of Pinot Blanc (15% oak-fermented for texture), it pours pale gold with fine bubbles, brioche and toasted almond wrapped around Fuji pear and citrus. Pour it alongside fish tacos or something creamy.
