Dave Phinney built his name on wine (The Prisoner, Orin Swift) before turning to whiskey on Mare Island, and it shows: this rye — 51% rye, 45% corn, 4% malted barley, grown within 50 miles of the distillery — ages a minimum three years in charred American oak, then finishes roughly two months in Grenache wine barrels. It lands at 100 proof, with citrus and tropical notes settling into white pepper, toasted vanilla, and a fruit-tinged oak finish. Pour it neat to catch the wine-barrel influence, or over one big cube.
