Carmel Wines' Yatir Darom Dry Red is a Negev-desert blend from the "Darom" project, built around Shiraz alongside Marselan, Carignan, Cabernet Sauvignon, and other varieties sourced from vineyards in Israel's Negev and southern Judean Hills. Each variety ferments separately — mostly in stainless steel, some in concrete or large open wooden vessels — before aging roughly seven months in wood and concrete. The result is a deep garnet-crimson red with red-petal and herbal-spice aromas, juicy dark fruit, and a tangy finish. Pour it alongside grilled meats or Mediterranean mezze.
