Most vodka starts with grain or potatoes. Black Cow starts with cheese — specifically the whey left over after West Dorset dairy farmer Jason Barber makes cheddar. He and neighbor Paul Archard spent years figuring out how to ferment that whey and triple-filter it into a genuinely smooth vodka with a soft, faintly sweet, creamy finish unlike grain-based spirits. It won gold at the San Francisco World Spirits Competition. Pour it neat and chilled, or into a simple vodka soda to let the creaminess show.
