If Armagnac has been sitting in Cognac's shadow for you, this is a friendly place to start. Labiette Castille VS comes from a single Bas Armagnac estate, where Ugni Blanc and Folle Blanche (plus a little Baco and Colombard) are distilled on a column alembic and aged separately in Gascony oak. Cellar Master Francois Lasportes blends 15 eaux-de-vie, each three to five years old, into something soft and round, with orange blossom, hyacinth, pear and honey. Sip it neat, or let it anchor a Sidecar.
