Most añejos age a year or two — this one from Alma de Agave spends 49 months in new, medium-roast Canadian oak, built from 100% Blue Weber agave grown on family estate fields along Jalisco's Lake Chapala. It's double pot-distilled in small stainless batches, then hand-numbered and signed bottle by bottle. Expect heavy oak and caramel on the nose, toasted cocoa and honey on the palate, finishing smooth with agave and caramel. Sip it neat in a snifter to let the barrel time show.
