Named for a New York cocktail bar and built around Spanish casks, this blended malt Scotch bottles a whisky-meets-wine idea most distillers never chase. Compass Box married Highland malts aged in sherry-seasoned and Spanish red-wine casks, letting the fruit run deep: think pears poached in red wine, citrus peel, warm spice, and a finish leaning toward vanilla panna cotta and cherries. Natural color, un-chill-filtered, 43%. Pour it into a wine glass and sip it slow, neat or over ice.
