Redbreast Pedro Ximenéz edition is here! The first limited release from the Iberian series from Midleton and unique addition to the Redbreast family. A single pot still, triple distilled and aged in Bourbon, Oloroso to be then finished in delectable Pedro Ximenéz Hogsheads from the southern tip of Spain.
Tasting notes
Nose: Quite chocolatey at first, but soon enough, buoyant notes of berries appear. Layers of nutty barley and toasty festive spices underneath.
Palate: Richly honeyed, with hints of brown sugar and toffee, before another helping of blackcurrant and raisin appears. A smidge of orange oil zestiness too.
Finish: Dark chocolate returns on the finish, with some drying cinnamon and nutmeg.
