Paul John's single malt story starts in Goa, on India's west coast, where six-row barley grown in Rajasthan and the Himalayan foothills gives an oilier, richer spirit than the usual two-row grain. This PX Select Cask ages first in bourbon barrels, then finishes in handpicked Pedro Ximénez sherry casks, picking up fig, apricot, butterscotch, and buttery Christmas-cake sweetness, bottled at 48% ABV. Pour it neat after dinner, alongside dark chocolate or dried fruit.
Tasting notes
Nose: Fig and apricot with a rare hint of banana.
Taste: Sweet barley with creamy butterscotch, dry fruits and Christmas cake.
Finish: Long and exquisite, with chocolate fudge, orange peel and exotic wine drenched nuts.
