Heavensake's 300ml "Sake Baby" comes from Hakushika, a Kobe-area brewery in Hyogo's Nada district that's been brewing since 1662 — one of Japan's largest sake houses. French winemaker Régis Camus blends the assemblage, giving this junmai ginjo a floral lift of jasmine and violet over silky pear and white plum, all wrapped in a smooth, round palate at 15.5% ABV.
