From Beenleigh Artisan Distillery in Queensland, this single-country rum spent thirteen years mellowing in ex-bourbon barrels before an additional year finishing in French oak at Maison Ferrand's cellars in Cognac — the double-aging technique that defines the Plantation style. Distilled in 2007 and bottled at 49.3% ABV, it opens with stone fruit, apricot, and fresh vanilla on the nose, moves into cooked fruit, citrus, and cocoa on the palate, and closes on exotic fruit and wood. Best sipped neat, after dinner.
