Ohishi - Sakura Cask Whisky
Japanese rice whisky produced by Ohishi Distillery in Mizukami, Japan
Distilled from a combination of estate-grown and locally sourced malted and unmalted grains. An initial seven-day clay pot fermentation period is kickstarted with white koji seed.
A second fourteen-day fermentation period takes place in stainless steel
Distilled in stainless steel pot stills
Non-age statement; aged in a combination of Oloroso sherry and brandy casks
Finished in locally grown Kumamoto Sakura casks for at least one year
Crème brûlée and soft fruit notes on the nose. The palate is custard, spice, floral, and sweet red fruit. The finish lingers with notes of spice and more creamy custard. There’s a very distinct cherrywood sawdust note, in the most pleasant way.
