Hugh Wesley's Barrel Rested Gin
For our gin production, we use wild-harvested Alabama juniper berries that are milder than traditional juniper and balance well with other botanicals including local pecans, cucumbers, star anise, angelica root, coriander and orange zest. We then take our traditional gin and let it rest for 9 months in one of our spent single malt whiskey barrels. This causes the spirit to take on the color and flavor of the whiskey and oak, highlighting the notes of orange and smoke. A sophisticated gin perfect for sipping.
