Portland's Eastside Distilling ages this rye the long way: first in native Oregon white oak (Quercus Garryana), a wood so tannin-rich it needs three years of seasoning before it can even hold whiskey, then a finishing stretch in bourbon casks. Bottled uncut at barrel strength, 110 proof, it pours honey, baked apple, and toasted oak on the nose, with wildflower honey, hazelnut, and leather carrying through to a tannic finish.
