Aberfeldy whisky is famous for its honeyed sweetness coming from the patient process of longer fermentation which allows for more flavor development. It is then mellowed for over 12 years in a combination of Sherry, Bourbon, Re-fill and Re-char casks.

Aberfeldy Distillery is nestled within a lush valley in the foothills of the Central Highlands of Scotland, within the quaint village of Aberfeldy, Perthshire. A land steeped in folklore and fables. Founded by the two Dewar’s brothers: Tommy and John Alexander, the distillery rose up in 1898 and was designed by the famous architect, Charles Doig. But just like whisky, the source of honey matters! It has provenance, terroir, it can change from hive to hive, and so it can be an exciting ingredient to experiment with, especially alongside whisky.
50 ml Aberfeldy 12 year old
15 ml local honey syrup
20 ml lemon juice
Spice mix - cinnamon, cloves, vanilla & nutmeg
Create your spice mix, add the Aberfeldy 12 year old and all the ingredients into a heatproof glass. Then top with hot water and stir. Remove the cloves, and garnish with lemon and a cinnamon stick
