Yamato means "great harmony," and this small batch earns the name. Aiko Importers tracked down surplus barrels at a distillery in Japan's Yamanashi Prefecture, in the fertile Kofu Basin ringed by mountains that include Mt. Fuji. Aged three to eight years in Mizunara oak and left unchill-filtered, it leans into the sandalwood, incense and gentle spice that Japanese oak is prized for, alongside rich vanilla and soft floral notes. Pour it neat or over one big cube and let it open.
