Dead Rabbit - Irish Whiskey
The Dead Rabbit Grocery & Grog in New York City is home to the largest collection of Irish whiskey in North America, so it was only a matter of time before it got its very own Irish whiskey! By teaming up with the Dublin Liberties Distillery, they have created this excellent expression. It’s based around a 5 year old whiskey matured in ex-bourbon barrels, which has then been finished in “half-sized” virgin American oak barrels.
Describing the taste of Dead Rabbit Irish Whiskey is like trying to describe a thrill. You know it when you feel it. There’s no mistaking it. And once you have actually experienced it, well you know what has to come next. Same again.
The Dead Rabbit Irish Whiskey is aged for five years in bourbon casks and then finished in small virgin oak casks, made especially for The Dead Rabbit Irish Whiskey, until Darryl, the Master Distiller is satisfied it has reached perfection.
Nose: Cedar, toasted brown sugar, apricot-filled pastries.
Palate: Caramel and vanilla sit up front, with notes of nutmeg, milky coffee and macadamia developing in the background.
Finish: Lingering waxy fruit and a tickle of black pepper.
